How about, when you realise bad things happen to good people, and vice versa? That the world is not a fair place, in other words.
This happens at different ages to different people according to what events in their life bring home to them, and is usually followed by a more mature outlook.
Legally, the definition of an adult will differ according to what you need it for. It seems as though it's generally used as the age beyond which a young person no longer needs to be protected by society from certain freedoms, such as the capacity to consume alcohol.

- Childhood is when dreams can be confused with reality
- Adulthood is when dreams are recognised to require hard work to make real
- Old age is when dreams are of things and people which are no longer real
- Death is when you don't dream
