Are you vegetarian, FWR?
We stopped eating meat years ago and I've found that you can stuff a range of vegetables from aubergines to mushrooms. I haven't tried this recipe though

No, nowhere remotely near a vegetarian, just love rice and peppers....and it's always nice to have a meat free recipe up your sleeve...this one is lovely, hope you enjoy.

I think we're trying a variant tomorrow, but it will probably have hamburger in. 
In the US, stuffed peppers have ground beef in them. It must be an Eastern European thing.

I hope your laundry knows how to get pepper stains out of your sleeves, then. 
I'm with Dmitri in assuming that peppers would be stuffed with hamburg(and, perhaps, rice). I don't have any peppers, and don't feel energetic enough to get some. The closest approximation would be the stuffed grape leaves they used to have at the nearest salad bar, back before they closed the salad bar!

Works with beef tomato and large flat cap mushrooms too, suppose you could also do arancini with any leftovers.

Arancini are stuffed rice balls that are coated with bread crumbs and then fried.

We also eat them stuffed with minced meat around here. Also in a small pond of tomato sauce.
