I do variants of this dish too! It's useful for using things up - like swede for example. I use dry chickpeas, soak them overnight and cook them before adding towards the end of the dish.
I don't think there's anything I would change.

Thank you for this - great context to the recipe. Particularly interesting about saffron, and about how to handle sweet potatoes for best results (I went through a phase of eating sweet potatoes every week, but did struggle with them going black so it put me off after a bit - I've learned two handy tips here )
I like couscous, but haven't ever had tagine in a restaurant because I think of it as a spicy hot dish with ingredients I wouldn't like - your Entry shows me that this recipe is something I would be likely to enjoy, though
As a novice cook I think the recipe itself looks very clear - I like the step-by-step approach and the extra instructions for people like me who are slow with a knife. Handy that it is a one-pot meal as well.
I presume the tins of tomatoes and chickpeas are the sort of 'standard' size ?400g or so. The recipe might be scalable, as I think I've seen small tins of chickpeas, but I guess there's no problem with freezing some if there were too much for one day, or at least keeping some in the fridge for the next day... I'm very tempted to have a go at this

It'll last about three days in the fridge without freezing. I tend to make it in these quantities and then eat it for days afterwards.
Not sure what size a "standard tin" is. I'll check.

If you have some left over, you can also turn it into the basis of a spicy soup (eg by frying an onion and adding it with a chopped tomato and some water)

I've added that the tins are standard 400g ones.
