I'd say there are 2 main methods.
1) Stand & fight, killing all you encounter that might want to hurt you.
2) Run the hell away & save health, ammo & avoid encounters like your life depends on it, because quite frankly it does.
Likewise for killing things, 2 main methods:-
1) Shoot & keep shooting until your sure it's dead or your out of ammo.
2) Try and be a 1 shot ninja, 1 shot - 1 kill.

In certain games running is the best option. Certainly in the original Resident Evil game, there was never quite enough ammunition as you wandered through the early stages.
I seem to recall it taking 3 shots to bring one zombie to the ground, then it took a further shot at their head to finish them.
