Tasty Cheese biscuit snacks - and flexible too!

Mediterranean Cheese Bites
Yield: about 6 dozen.
The best part about this recipe is that it's very flexible. The feta can be any type of crumbly cheese and the herbs and nuts can all be substituted with what you like most. I've come up with several variations of these. These can also be made well ahead and baked just before your guests arrive, just like refridgerated cookie dough
Ingredients
- 1½ cups - 150g - flour
- 2-3 tsp cracked black pepper
- 8oz - 200g - feta cheese
- 1 clove garlic [crushed and mixed with herbs below]
- 1 tbsp each fresh [if dried switch to 1 tsp] rosemary, oregano and thyme [chopped] or any herbs you really like
- ¼ cup - 25g - butter
- 1 cup - 125g - chopped walnuts
- 2 egg yolks
Method
Combine flour and pepper in a bowl then cut in blue cheese and butter until mixture resembles coarse crumbs. Stir in nuts and egg yolks until combined into a dough ball.
Divide dough in half and form 2 9" long logs. Wrap logs in plastic and chill in fridge for a minimum of two hours. They last refrigerated like this for days so you can make them way ahead. I haven't tried freezing the dough yet, but it should freeze well, then it can be used like refrigerator cookies.
Preheat oven to 425 F. Cut logs into ¼" slices and place on ungreased cookie sheets. Bake 8-10 minutes until bottoms and edges are golden. Serve warm or at room temperature.
