Leave 3 fruits per plant?!

We'd be happy if we could get more than 1 fruit per plant to set! We've never tried pumpkins but two years running our attempts at squashes have produced healthy plants with loads of leaves and flowers but just one fruit setting per plant and only just managed to ripen up this year. Not sure if we don't have a sunny enough spot or a long enough frost-free period up here in the Peak District.
Whatever, the ones that did ripen were delicious, tasty & nutty
