I think, although I'm not certain, that Irish and American are the only varieties spelled "Whiskey", and everyone else, Scotch, Canadian, et al are all spelled without the 'e'.
I'm very very nearly positive that Canadians don't use the 'e'. The rest I'm unsure of. I'll go find some liquor reference to ascertain my wild claims and come back, unless you find one first.

Whisky is of course only the phonetic spelling as the English speakers hear it of the GhĂ idhlig word "uisge" meaning water and is a truncation of "uisge beatha" the water of life.
