This looks reasonably good
I think the title could do with a hyphen (Chips Mayai - the 2nd National Dish of Tanzania?), and you should probably change the subheaders to headers.
greasy spoon's --> greasy spoons (I think...)

I've managed to squeeze it into the text, I'm not going to put it in amongst the recipe for chips as those recipes are purely how to make chips, they are not recipes for dishes that can be made with chips..

Are the Ugali cooked, or is it a 'raw' dough? I know it's not vital to the piece, I was just wondering.
Couple of typos:

Nice entry. I really like the ramble into a bit of relevant history. History lessons in recipes is neat .
Maize porridge/balls is a staple in a lot of African countries. Certainly found in SA and Zimbabwe. My brother developed a taste for it in two years he spent in Tanzania, ordered it by choice . So I tried it, and liked the meat and banana stew version.
I'll have to try this. Wonder if it works with oven chips?
About the poutine link – I don’t think it works where it is, for one thing it’s nothing to do with eggs, and we’re talking 'egg and chips' dishes here, for another it’s odd to mention just one chips dish then make the 'traditional British Egg and Chips' comparison.
But it doesn't belong in the list of chips links either, for the reason you gave. Perhaps the answer is not to refer to those links as recipes? Or give them fuller titles, eg

How to make Chips by the British Potato Council
Homemade oven chips by the British Potato Council
Some more typos etc.

‘Right ramble over back to the process,…’ might benefit from a couple of extra commas? -> ‘Right, ramble over, back to the process,…’

‘and is usually provided with a bottle is Tomato Ketchup', is Tomato -> of Tomato
‘This all sound great but how do you get one if your not Tanzanian?’ sound -> sounds. Your -> you’re.

Cheers LLwaz I've picked up the typos and spelling. I'm leaving the Poutine link alone for now as it does 'sort-of' fit and I do like lots of links in my entry even if they're not totally relevant. In fact the more random and obscure they are the better sometimes!
Rockhound yeas Ugali is cooked as the maize flour is added to boiling water...here's a recipe if you want to try it a home
Why anyone would want to try it I've not got a clue, it's digusting, most of the reason Africans eat the stuff is because it's cheap nutritious and easily grown, not because it taste good.

I belive cornmeal/maize flour are the same thing...you 'may' be able to use corn flour but I'm no chef so don't quote me on it, here it is:

I've emailed my brother to find out why he liked it. I put it down to carbohydrate cravings at the time. It can be seasoned though, well I assume so.
The sudza (? spelling) version in Zimbabwe was a staple at BBQs. And, thinking back, the one occasion I tried it on it's own, it wasn't seasoned.

Bit off topic, strictly speaking, but I just found that sudza (which is correct spelling) can also be used instead of wax in making batiks...
