One question so far - what is the plural of Aztec? Is it Aztec or Aztecs?

hmmm now you come to mention it thats possibly quite a tough question. I have seen aztec and aztecs as plural. The same being true for mayan. As we are talking about race I suspect without the s is fine. i am not entirely sure where is a reliable enough answer for that one. Will do a bit of digging though

Just popping back to this article, I see one thing I'm curious about.
The recipe calls for cinnamon when this spice is native to asia, not Mexico....
How's that work?
Is it a replacement for an unavailable spice?

There is a native mexican 'cinnamon'. You can get it at just about any market in Los Angeles. It is less 'hot' and more 'barky' and has a citrus kick to it.
