In the UK at least, golden syrup is a bit like maple syrup in consistency, and is used in a similar way, but it's not really the same. It's best described as 'liquid sugar' and it's yummy. Like brown sauce, it doesn't seem to have crossed the Atlantic though.

But anyway, golden syrup is a viscous and increadably sticky syrup, consisting, like all syrups, mostly of sugar. It's very nice and an essential cooking ingrediant over here (at least in my sweet tooth orientated cooking it is, anyway). Especially as far as flapjacks, syrup sponge and of course, toffee sauce are concerned.

can i subsitute corn syrup for it? or would maple wyrup maybe work? this recipe sonds reeeally good, but i have no clue where i could get golden syrup over here.

You could try maple syrup, but use a stronger suger like demorara or turbinado. I'm not sure about the quantities at the moment though. I'd use a bit less sugar and butter and more syrup as it's not as viscous. I don't know about corn syrup, but you could give it a try. The recipe originates from experimentations of my mother when she was at college after all. As long as you use syrup, you will end up with something edible, the only room for variation is how well it sticks to the popcorn.

I was going to use some corn syrup but on looking it up under 'corn syrup' on the net I found that it is not good to use. Check it out.
It is derived from converting corn starch and has problems. mainly used by manufacturers as a cheaper sugar.
