I forgot about these classic Brekky dishes...
Bubble & Squeak
Take left over potatoes (boiled or fried), cabbage, carrots, onion (any other vegetables you have with roast can be included - cauliflower, broccoli even peas and green beans)
All of this is traditionally leftover from a roast dinner the day before - I usually cook the raost with bubble & squeak in mind.
Dice them up together and lob into a frying pan with a large knob of butter, salt & pepper and cook. You need to aim to slghtly burn it.
Then put some bacon / sausages / black pudding / eggs in the frying pan with it and you have a classic brekky.
The other traditional classic is Kedgeree - Onion, lotsa Butter, tsp cury powder, Smoked Haddock, hard boiled Eggs and rice.
