When cooking a great British breakfast (there's an EG entry on this) you *have* to use lard.

None of your ruddy olive oil nonsense, leave your low-fat substitue in the supermarket shelf and use lashings of lard. It really does bring out all the flavour of all the food while keeping it all moist. It's lard that makes the bubble and squeak squeak, it's lard that makes those mushrooms glisten and more flavoursome than usual and it's lard that makes fried bread really scrummy.

(As an aside, use the lard to fry yuor bread in after you've used it for bacon/sausages - it absorbs all their flavours.)

Bring on the lard, you know it makes sense
