Particularly good at this time of year (February) is to serve it with stewed rhubarb.
Just chop up the rhubarb and leave it, covered with sugar, in a pan overnight (this draws some of the liquid out) and then heat it for half an hour to an hour, until the rhubarb is softened and the liquid is reduced. Put the parkin in a bowl and pour over the stewed rhubarb. The astringency of the rhubarb cuts the sweetness of the parkin, and the parkin softens into a lovely, gooey mess.
