Caesar Salad

Invented by the New York chef Caesar Cardini.
finely mince some garlic and let it soak a while in the olive oil you'll use for the dressing.
Rip up some romaine lettuce into a bowl.
Sprinkle with shredded Parmesan cheese, pour the garlic oil over it, squeeze some lemon juice on.
Some people add sardines or chopped chicken breast.

So the ones that you see these days are very different to the original then! Where did the anchovy come from? I thought caesar dressing always had anchovy in it, and some evil folk put extra ones on top. Also, cesar dressings are almost always creamy, so when did that variation creep in?

That "caesar dressing" is just all the ingredients listed above, popped in a blender and creamified.

I still wonder about the anchovy thing though
Smoked chicken breast is good, with parmesan shavings on top (not just in the dressing). I really hate it when restaurants drown the salad in the dressing. It has quite a strong taste so less is definitely more
