Hi Since Dr St Justin has so wonderfully described one common quickish Risotto variant form the Light Recipe Repitoire http://www.bbc.co.uk/dna/h2g2/F84024?thread=178482 I thought I would share the other ... Sometimes known as the Wet Sunday Afternoon in the Lighthouse (an in joke based around its creation from almost empty cupboards and a desore not to go to the shops) Cook the rice (preferably a jasmine rice or a white rice with a pinch of lemongrass in the cooking water) as per the packet instructions Dice a yellow (prefferably although any sweet pepper works) and some fetta cheese Once the rice is cooked mix in the peppers, fetta cheese and some prawns Eat with a large glass of a crisp white wine Both these recepies can be eaten cold the next day if kept in the fridge Hope you enjoy!
