If you want a really fluffy crisp potato, I recommend Maris Piper. Readily available now in all supermarkets. For a perfect roast potato, par boil for 5 minutes, drain the water from the saucepan, put a knob of butter in the hot pot, shake the pot gently to 'rough up the surface of the potatoes, but not hard enough to break them up, then place in a hot roasting pan for 45 minutes to an hour in a hot oven gas 7 or 8 or 260 degrees.
