Just a couple of notes on my Mexican cooking entries. A couple of things got slightly changed which misunderstood what I meant to say:

"refried beans" are beans that have been really cookeda lot as opposed to fried again ("re" is used for emphasis in Spanish like "doch" in German).

To make these beans you wash them soak them overnight then drain the water. Then add fresh water to cover and cook. You do not remove the beans but cook them in the water until they are mushy. Then you can add salt to taste and mash them - should be like runny mashed potatoes if not just cook them more. Then these beans can be fried until a little drier. Good stuff. You can of course fry them again to warm them up again - add water if too dry.

The spellingI usually have seen for the "chilli" pepper is "chile" - How it is spelt in Spanish also - plural "chiles". Then if you wnt to get scientific and latinate you can always call them capsicum anuums.
