I was interested by the information about St Cyprien Plage. I have owned a holiday house there for 15 years and would commend your advice about things to do and add :-
Golf is not expensive by UK standards or by Spanish standards
If Carcassonne is too far try a visit to Villefranche de Conflent - an old walled town but smaller than Carcassone. Nearby are caves which can be visited and a little further up the road there are thermal sprigs at St Thomas Les Bains. Also this is the start point for "Le petit Train Jaune" - the little yellow train - which takes you up into the Pyrenees close to the Andorra Border. Visit the Solar oven at Font-Romeau.
Take a day to tour the many vinyards in the area. The wineis excellent - particularly the reds and sweet wines- red sweet at Maury - Muscadet Rivesaltes an acceptable sweet white at prices well below other European sweet white wines.
Visit Chateau Valmy which has a raptor demonstration in the afternoon.
Visit Collioure - a must. Park in car park (pay & display) at entrance to twon as you descend a steep hill.
