In class on two separate occasions I was shown how to put a lobster to sleep. Fold its claws in front of it and sort of balance it on them, then fold its tail onto its underside and hold it there. After about 15 seconds or so, you can remove your hand and the lobster will stay in that position. I'm not sure how long it lasts, as both times this demonstration immediately proceeded throwing the lobster into a pot of boiling water, presumably waking it up just in time to become, briefly, very upset.
