Any egg-separating which doesn't quite come off, should be whipped up & made into an omelette.
Add some left-over cheese and vegetables & you have a sufficient meal for one.
When making lemon meringue pie, this requires one egg yolk for the lemon filling, and two egg whites for the meringue.
Try & bake the same day.
That way you can use your spare egg yolk as a glaze to brush atop a pie-crust.
I certainly wouldn't try & separate an egg & allow the white to go down the drain.
If you really don't need the wasted egg for anything, place on a saucer & put it outside on your bird table & see how the birds appreciate it!
