Rabbit liver

Rabbits are well known to carry flukes. These are to be found in its liver. I've shot/trapped/eaten lots of rabbits and am happy to use the heart and kidneys, but *never* the liver.

If infestations are heavy then it's obvious and you'd not want to use it anyway. But if the liver looks okay that's still no proof that it is so.

Flecked livers with pale spots and marbling are what you don't want to see.

Safer to dispose of rabbit livers. But if you are convinced all's well and must use the thing, remember to remove the gall bladder from the liver WITHOUT puncturing it in any way. Its bile would taint your meal in a way you'll never forget.
