There are a variety of mexican dishes that include insects. Here's one for maguey worms.
MAGUEY WORMS
200 grams maguey worms (also known as mescal worms).
50 grams shortening.
Salt.
2 avocados.
1/2 cup salsa borracha (that's "drunk sauce", recipe follows).
16 tortillas.
Wash worms carefully and pat dry with a paper towel. Heat shortening to aromatic temperature in a thick saucepan and cook worms a few at a time with a bit of salt, until they turn red. Dry on paper towels. Serve immediately with sauce, tortillas and avocado slices on the side. Serves 8.
SALSA BORRACHA
1/2 kilo sasilla chilies.
100 grams mulato chilies.
50 grams guajillo chilies.
1/2 litre red wine.
2 cups orange juice.
Lemon, salt and pepper to taste.
Toast, skin devein and chop chilies coarsely. Place in a bowl with wine, orange juice, lemon, salt and pepper. Cover and refrigerate at least 12 hours. Blend until smooth.
