I don't know where it started but a big tradition here is eating a ton of corned beef and cabbage or if you're not that hungry to have a Reuben sandwich. Of courxe either should be washed down with a pint or two of Guiness. Fortunately I live near two semi-authentic Irish pubs(that is they're both owned by Irish-Americans and have Guiness on tap).

What no champ with that?
Champ is mashed potatos and scallions (spring onions to the rest of the world) a traditional Irish dish, often served on it's own or as a side dish.

Never even heard of it, and I have a lot of friends who call themselves Irish-Americans. Is there a recipe? I'd love to show them something truly Irish.

Recipe:
Boil potatos.
Mash with butter and milk.
Add chopped scallions.
Serve. Optional make a well in the champ and add more butter.
Easy really.

Excellent, thanks, I'll be taking some down to the bar tomorrow, my buddy who owns it has never even heard of it and he's a Chicago Irishman. This will definitely beat the boiled cabbage everyone is used to.

A tell him you got the recipe off a Irish-Irishman, who had it served to him yesterday in the works cateen as the St. Patricks Day warm up, with a complimentary Whiskey!!
