Hi Spiff you have written a very good entry and it is a very good recipe which I have tried out and it is very tasty.
When I soak beans overnight I use boiling water (it seems to help to soften the beans better) and when I cook I only add salt at the very end. I got the tip about adding salt at the end from a cookbook.
