I was personally distressed to see an article about peanut butter with no mention of George Washington Carver. I had always thought he invented it too, but apparently that is a myth. We can credit him with inventing 325 other uses for the peanut though. Prior to his intervention the lowly peanut was not well thought of. We can thank our brilliant and intrepid agriculturist chemist/inventor, Dr. Carver, for proving that peanuts were worth cultivating. His genius also proved that the versatile peanut plant would reinvigorate soil depleted by generations of cotton crops in the American south. Three cheers for an American hero!
