I would just like to raise an issue brought up long ago in my impractical mycology class. We studied fungal infections of plants and fungal toxins, and to make it brief, found out that the fungus that normally infects peanuts produces aflatoxins. I was just wondering if you knew anything about what precautions the peanut butter industry takes when processing peanuts or how they get rid of it? Thanks.
