I've heard that ancient persians used to make a guy chew rice while giving testimony - if it stuck (because his mouth was dry) they considered him lying.
Another king claimed his donkey would bray if a liar pulled its tail. He sent suspects into the dark room to pull the donkey's tail, which was covered in soot. If a suspect came out without dirty hands they locked him up and threw away the key.
