In the UK, the Centre for Alternative Technology (in Mid Wales) not only has examples of some of the techniques (rammed earth, segal self build, straw bale etc). It also runs courses in designing and using these techniques.

CAT's a fantastic place - which I've never actually visited But I'm a member and get their quarterly journal. It's inspirational for sure.

If you get the chance do go, it's fab! I went a year or so back for the first time and really enjoyed it. Lots to look at and play with, a very good sense of them knowing what's practical with certain technologies because they've been there and done it.
