Doesn't anyone know about Belize? Really, really awesome place if you don't mind the insane taxi drivers. Go to Half Moon Caye (4 hour speedboat trip from Belize City) for a week or two, hopefully when its warm, and go snorkelling. Plus, the really awesome beach and the total seclusion makes it quite possibly the best place, ever. The wind is an issue sometimes but it's warm.
