Removing/not removing the helmet in case of accident - I was taught to definitely remove the helmet (and we were shown how to do it and even practised it) in a first aid course last year. If the crashed biker is unconscious, you couldn't tell if he/she is still breathing or not with the helmet on, and of course you couldn't do CPR if necessary. So it's either the risk of spinal damage (if you don't do it right) or the risk of the crash victim dying.
But it's of course correct that you need to be trained - at least in a first aid course. And you need a second person, though, otherwise the helmet has to stay on.
