A most excellent recipe. I've made many a veggie stew but never thought of dumplings. The only change I would make is to lightly brown some chopped onions first and then continue with the liquid but that's just my preference. My sister would probably add a little sherry! smiley - biggrin

I ususally add onions, but not fry them first. Last time I made this was last night, had the soup ealier this evening. Nice idea with the sherry, though I don't normally have sherry in the house, have lager and cider, may be I could try adding a tipple of cider next time. smiley - smiley

Try the lager - add after frying the onions a bit, so that you can reduce the liquid.

About cooking onions. What I like is to chop them up finely then let them cook slowly with some butter. They sort of caramelize and are really tasty.
