Although wrapping the potato in foil prior to baking will make the jacket crispier, it also makes the texture of the potato mealier. If you prefer a flaky potato, skip the foil and stick it directly on the rack, or on a cookie sheet with a layer of rock salt.

Some of my favorite tater toppings are:

salsa (perferably chilled)

chili, grated cheese, and a bit of chopped onion

plain yogurt, cilantro, and diced cucumber and/or red onion

sauteed mushrooms (this one seems quite popular)

pizza sauce and grated mozzarella

caviar

Cliantro is an herb- the seeds are called coriander. it's very yummy!

It sounds like one fo those zucchini/courgette eggplant/aubergine deals to me - in the UK we have Corriander and Corriander seeds and in the US the equivalent is cilantro and corriander.

That sound right?

My faves are brie, stilton or grated mature cheddar. Anyone notice the cheese theme? Also cheddar and beans - the king af all jacket toppings. Cheese and tomato relish is good too, or at its most simple - a knob of salted butter. When feeling healthy you can't beat cold cottage cheese with onion and chives, or lightly dressed coleslaw. Mmmmmm...... smiley - drool

They must have crispy skin too - best achieved by brushing with vegetable oil and cooking start to finish in the oven, but also possible by nuking the potato in the microwave until cooked then sticking it under the grill for about 10 minutes, turning it over half way through.

I once heated up leftover Macaroni and Cheese. Wasn't too bad, actually. I've tried leftover spaghetti, but it takes a lot of getting used to, and may not be to everyone's taste.

I tried one for lunch with some scrambled egg, tomato, and green pepper. Yummy- kind of like one of those skillets you get at a diner, but without the skillet. smiley - smiley

Yep! I actually enjoy cooking, and like to be creative. I get tired of having the same things the same way every time. Sometimes, my experimentation has had less than desirable results, but I usually wind up with something rather pleasant.

Over the weekend, I went to a place that served stuffed baked potatoes as an entree. I had one with creamed corn (they had it with or without chopped fried bacon). It was good. One of my friends had one with curry sauce and pineapple, and they also served one with sauerkraut.

We eat a lot of baked potatoes at our house - too lazy to do them any other way! One of our favorites is: Take big potatoes, and cut into them cross-wise three or four times - almost right through. Fill the slits with butter, sprinkle with salt, pepper, garlic powder. Wrap in tin foil. Bake in the oven, on the barbecue, or on the coals of a camp fire. Yummy!!

Micorwaving potatoes: Don't forget to pierce the skins if you microwave potatoes - they make an awful mess if you don't and they explode.
