While I know what you mean when you describe the Scottish ch as a 'very non-Anglo-Saxon sound', it's worthing noting that Anglo-Saxon did in fact use this sound for a h in the middle of a word.

If you can think of a suitable update, then go for it. How about 'a very non-English sound'? Alternatively, add what you said in a footnote.
