Spiced banana muffins.

These easy to make spiced banana muffins make a nice treat for winter tea.


 Makes 12 muffins.


 Dry ingredients:


 250g self raising flour


115g caster sugar

 1tsp baking powder

 1/2 tsp bicarbonate of soda

 Pinch salt

 1/2 tsp ground cinnamon 

 1 tsp ground ginger

 1/2 tsp ground all spice

Wet Ingredients:

75g melted butter

 1 tsp vanilla extract

 2 bananas , mashed

 2 eggs

 120 ml milk

 1 tbsp golden syrup


 Method.


 Mash the bananas with a fork

 Melt butter and allow to cool

 Using a wooden spoon- 

 Mix all dry ingredients in bowl

 Mix wet ingredients in another bowl

 Add wet ingredients to dry ingredients 

 Mix well until all ingredients form a smooth batter. Add mashed banana.

(Note there will be small lumps of banana! )

 Fill muffin cases to 3/4 full with the mixture. 

 Bake at 190 degrees until golden brown , 15 to 20 minutes depending on the size of case used.


To check if cooked, pierce with a skewer  (If skewer comes out clean you muffins are ready.}

 Tip. A great recipe for using up over-ripe bananas..

This recipe can be altered to taste, less spice or try adding raisins and a drop of rum! 


Note: these are American cake style sweet muffins, not English breakfast bread style muffins.
