Not stuffing a turkey's cavities is no doubt sage advice (ahem), but it's a risk I'm willing to take - because I'm so brave, not because I'm a glutton or anything like that. Not taking up bungy jumping is my way of living cautiously.
This is probably not a good thing to do either, but I like to slide a thin layer of sage and onion stuffing (... and sausage) under the skin, as it helps to keep the breast nice and moist. The skin crisps nicely, too.

I must confess that I alway stuff the, ahem, arse with stuffing, the neck with sausage meat, force butter under the skin and cover with strips of streaky bacon. I also pack chipolata sausages all round it, cover it completely in tin foil and slow-cooked it overnight! So... I also live dangerously... and have done for some time!
These modern hygenists and food health advisors certainly take all the fun out of it!

Mmmm... I can almost smell it. The world would be a duller place without culinary heroes like ourselves, gastronauts, the 'right stuff(ing)'? Anyone who 'eats sensibly' at Christmas is missing the point.
