You know, I never quite could get my head around ready made stock - until some enthusiastic folks in Stockholm got it in *their heads to make *real stock. At first, they only made it for restaurants and other large scale cooking facilities.

I've been keeping my eye on them and, when I learnt they'd started selling 'regular' packages in supermarkets I run to get myself a pot (plastic bucket).

All the ingredients are free-range and organic and none of them anything you wouldn't have at home. No preservatives, no taste enhancers. Considerably less salt than in regular stock cubes.

Since the best-before-date was rapidly approaching, I had to come up with some way to use it (rather, having to choose between millions of ideas).

So here's what I ended up doing with it:

Butter
Onions (mixed)
Cook until soft

Shredded fresh white cabbage
Cook until softening

Minced lamb
Stir

Tomatoes, either crushed or chopped up

Various spices according to taste

Chicken stock enough to cover it all

Allow to simmer a while

Towards the end, add smetana, creme fraiche or sour cream

When serving, add some shredded cheese on top, if you like. Stir it into the casserole to get that chewy texture.

I've had four servings today (it's close to midnight, and I only had some yoghurt for breakfast) and I still have some stock, cabbage and minced lamb left.

I also have a package of mixed beans - I think. Not strictly LCHF but occasionally I like using them in a casserole. Sunday meals secured! biggrin

Oh, and the stock was mostly jelly - just like it should be.

Ti, you are a genuine inspiration. I'm too inconsistent with my eating. I'm trying to come up with a diet I can live with for the rest of my life. I have a hard time staying as low carb as you do. But I do manage to eat far fewer carbs than the standard American diet calls for. So I'm heading in the right direction even if I'm not there yet.

Well, I don't always feel inspired to cook but when I do, I share it, in the hope that it will inspire others as well.

Just skipping the sugars, starches and the fast carbs is good enough, Hyp hug
