B,Elana you have now lodged an inevitable buying choice in my skull by writing this article. I know that this weekend I'll be going to a favourite supermarket in Manama that has a good bread selection including pumpernickel; I'll definitely be buying some. I've ground the rye, but it's still a bit too warm to leave the oven on for so many hours.
Yeah, have you worked out the carbon footprint of a loaf of pumpernickel? I can't imagine many recipes requiring the oven to be left on for so long!

True, true. But now you've mentioned it, I wonder whether I should better not bake it.
That's for you to decide. Have you read about solar ovens? If we were in a warmer bit of the world we could make pumpernickel every day without worry! Maybe we've found a niche in the market! Sahara baked pumpernickel. In the UK there is a famous cake brand called Sarah Lee You could be known as Sahara Bel!
