finished (as in 'the job is finished', but not as in 'I've finished') = 'perfectum' (this is neuter, as would be appropriate if it's some work (opus) that's finished.)

the last one = 'ultimum' or 'postremum' This assumes 'one' is neuter. Replace 'um' with 'us' for masculine or 'a' for feminine.
