I don't think I could tell you any more about that than you could learn from Wikipedia. Despite having lived here for 12 years and change, I don't much care for Mexican cuisine.
I think tacos are pretty much like a sandwich - you can put just about what you want in them, whether it's a flour tortilla or corn tortilla. Breakfast tacos are big around these parts. The Austin equivalent of toast and marmalade. They're usually flour tortillas filled with potato, egg, bacon, cheese, ham, onion (perm any combination), usually bought from a food stand or trailer. But I wouldn't exactly call them authentic Mexican. Authentic Austin, deffo.
